Yes, you read that right. We made Fried Chicken Pizza and it was the most amazing.thing.EVER. I will not apologize for the “I’m trying to make this look gourmet but it’s really trashy food” post. Because it was that good.
So first we went to Sissy’s (aka my new favorite Dallas restaurant) for a belated bday/ friends are in town/ general celebratory dinner. There was lots of this going on:
We managed to look at the menu long enough to decide that we were going all out with the Fried Chicken, and then proceeded to order nearly every appetizer and side on the menu as accompaniments. The only thing green on the table was the okra, and it was fried. And it was still delicious.
Due to the massive amounts of carbs ingested, the eight of us ended up with at least half of our 20 pieces of chicken leftover. So like the fattening food-obsessed non-wasteful people we are, we insisted on taking the leftovers home, even though we had meal plans lined up for the rest of the weekend. This was our first good decision. The next night we planned on having a grilled pizza party a la maison de Weatherford. Because grilling pizzas is our favorite summer dinner party. Nevermind that Dallas was essentially getting crop-dusted that night to manage all the pesky West Nile mosquitoes. (We finished grilling at 8:58 – 2 minutes before spraying started, so don’t worry.)
Anyway, that day while lounging in the pool someone (half-jokingly, I think) suggested putting our leftover Sissy’s chicken on one of the pizzas. Hello, GENIUS. But what should we put with it? Um, cheddar cheese. Green onions. And RANCH, duh. Or as Emily and I refer to it, the white-trash condiment of the south.
And since it would a shame to waste any of the chicken goodness – yes, we collected every last morsel of fried chicken skin and sprinkled those on top. Just for good measure. And we ended up with this glorious pizza.
Fried Chicken Pizza
1 ball pizza dough
6-8 small pieces of fried chicken
1 6 oz plain Greek yogurt
1 packet Hidden Valley Ranch dressing mix
8 ounces sharp cheddar cheese
4-6 green onions, chopped
Place leftover fried chicken on a baking sheet and place under the broiler on low to recrisp the skin. This took us about 5-8 minutes. Shred chicken, keeping as much skin as possible intact. Reserve extra skin pieces.
Meanwhile stretch out your dough to about a 14 inch round (or rectangle, whatever comes out is fine.) Place on a sheet of parchment paper or a pizza peel.
Mix about half of the ranch dressing mix into Greek yogurt.
When you are ready to assemble the pizza, spread on ranch dressing, followed by cheese, chicken, skins, and green onions. Cook until dough is crispy and cheese is melted.*
*We used this method to grill our pizzas. If you are baking, preheat oven to 450˙, then bake for 10-12 minutes. If you bake, you might not need to re-crisp the chicken for quite as long.
